Rice and Potatoes Substitute


  • 1 Cup Quinoa
  • 1 ½ Cups Low-Sodium Chicken broth
  • 2 Cups Broccoli, chopped in small pieces
  • ½ Cup Cheddar Cheese, shredded
  • Salt and Pepper (to taste)


  1. Rinse the quinoa under cold running water.
  2. In a saucepan over medium heat, bring the quinoa, chicken broth and broccoli to a boil.
  3. Reduce heat and simmer covered until the broth has been absorbed and the quinoa is tender. About 15 minutes.
  4. Mix in the cheese, let it melt.
  5. Season with salt and pepper.
